Sometimes, I try new things. Sometimes, I listen to people describing how delicious
something is and I believe them. Sometimes I put a lot of work into making something
that turns out to be not really that good. Tonight was one of those times.
Spinach is not my favorite green (kale currently holds that spot). There is
something... off... about the taste that reminds me of musty basements. But,
every once in a while I forget this, or I decide to give it another try. In
that light, this recipe isn't bad. If you like bacon and spinach, then this
recipe is great!
I was intrigued by using chicken stock to make the pasta, but it was great and left
a wonderful sauce. I might try this again with kale. I might also try making the
bacon a bit crispier, to increase the bacon flavor.

It's not all epic concoctions here. Sometimes, I'm in the mood for something
bad for me. But, even the bad food has good things to know.
Mac and Cheese was a special occasion growing up. I don't know if they put
crack in it, but there is something about the classic blue box that tastes
nostalgically better than all other Mac and Cheese.
But, eating just a box (or two) of Mac and Cheese just isn't enough adulting
for my taste. So, tonight, I spiced it up a bit with some spicy beef.

About a month ago, someone put the idea of a "breakfast lasagna" in my head. It
turned out not to be what I thought, but I tried it anyway. I took scrambled
eggs, onions, green peppers, cheese, and bacon, layered it all with lasagna
noodles, and served it with sour cream. It was not terrible, but I used way
too much onion by far, so it was also not very good, and I will have to revisit it...
But, I used only half of the lasagna noodles I bought, so I decided to make a
classic lasagna like Grandma used to make (for Christmas, I swear, we had
Christmas lasagna. I love you, Grandma).
A classic lasagna is only barely more difficult than Spaghetti Bolognese. It
takes all the same ingredients, adds some cheese, and bakes it like a

Before tonight, I had never had kale. Of all the greens I've had (which are
lettuce and spinach and now kale), I think I like kale the most.
Kale is annoying to prep, though. First you have to remove it from the stalk.
Then, for this recipe, you need to cut the larger chunks into strips. For 1 lb.
of kale, this took about 15 minutes. In the future, it might be easier to cut
the strips while the kale is on the stalk.
This is yet another Budget Bytes
really like these recipes, because they aren't overly complicated, and
especially aren't overly expensive.
In order to make this more of a meal, I added 1 lb. of ground turkey. I'm not
sure it was necessary, as the end result was 4 meal-sized servings. But, some
extra protein never hurt nobody.

These spicy noodles are so quick and easy to just toss together. I always have
eggs and butter on-hand, so the only thing I need to grab are green onions (and
those are completely optional).
