Before I could post the chicken broccoli alfredo recipe, I needed to try it again with the right portions of cheese. I didn't feel like cooking meat, so instead I tried spinach and mushrooms, despite my previous experience with spinach, in bacon and spinach pasta with parmesan being less than satisfactory.

The end result was I finally made a spinach dish that I liked. And I made a mushroom alfredo that wasn't just "mushroom gravy with cheese". And they both happened at the same time!

Bacon and Spinach Pasta with Parmesan

Sometimes, I try new things. Sometimes, I listen to people describing how delicious something is and I believe them. Sometimes I put a lot of work into making something that turns out to be not really that good. Tonight was one of those times.

Spinach is not my favorite green (kale currently holds that spot). There is something... off... about the taste that reminds me of musty basements. But, every once in a while I forget this, or I decide to give it another try. In that light, this recipe isn't bad. If you like bacon and spinach, then this recipe is great!

I was intrigued by using chicken stock to make the pasta, but it was great and left a wonderful sauce. I might try this again with kale. I might also try making the bacon a bit crispier, to increase the bacon flavor.

Garlic Parmesan Kale Pasta

Before tonight, I had never had kale. Of all the greens I've had (which are lettuce and spinach and now kale), I think I like kale the most.

Kale is annoying to prep, though. First you have to remove it from the stalk. Then, for this recipe, you need to cut the larger chunks into strips. For 1 lb. of kale, this took about 15 minutes. In the future, it might be easier to cut the strips while the kale is on the stalk.

This is yet another Budget Bytes recipe. I really like these recipes, because they aren't overly complicated, and especially aren't overly expensive.

In order to make this more of a meal, I added 1 lb. of ground turkey. I'm not sure it was necessary, as the end result was 4 meal-sized servings. But, some extra protein never hurt nobody.
